Top Chicken Freekeh with Tomatoes Recipe

Preparation Time: 10 Minutes

Cooking Time: 15- 20 Minutes

2 chicken breasts cut into small cubes

2 cups freekeh (washed, soaked and drained)

1 onion, diced fine

1 tsp garlic, mashed

8 tomatoes, diced fresh (or 1 can + 3 fresh tomatoes)

1 tbsp allspice

Olive oil

Salt and pepper




1- Sauté onion, garlic, chicken in 2 tbsp olive oil. Cook for 5 minutes.

2- Add tomatoes and bring to a boil for 5 minutes.

3- Add freekeh and boil for 5 minutes.

4- Simmer until freekeh and chicken is tender and most liquid has been absorbed.

5- Garnish with mint chopped, or parsley.
