Couscous is a dish made of fine semolina and topped with meat and vegetables. To make couscous in the traditional way takes a lot of time and effort. Women separate and mix the grains of semolina by using the palm of their hands and salt water, a process that takes one hour for the semolina alone. Recipe Ingredient

  • 4 chicken legs, skinless, split
  • 1 tbsp. olive oil
  • 2 carrots, peeled and diced
  • 2 onion, diced
  • 1 tbsp. Moroccan spice blend
  • 1/4 cup lemon juice
  • 2 cup chicken broth (without salt)
  • 1/2 cup ripe black or green or green olives, sliced
  • 1 tbsp. chili sauce
  • 1 tsp. salt
  • For Couscous: 1 cup chicken broth
  • 1 cup couscous (whole wheat)
  • 1 tsp dried mint

Instructions

  1. In a sauté pan, heat olive oil and add chicken legs. Cook for 2 minutes per side.
  2. Remove chicken from pan. Add spice blend to sauté pan and toast lightly.
  3. Add carrots and onion to spice and cook for 3 minutes or until the onions have turned light yellow.
  4. Add lemon juice, chicken broth, and olives to sauté pan. Leave it to boil in a high heat.
  5. Add chicken legs, and return to a boil too. Cover and gently simmer for about 10-15 minutes.
