- 4 chicken legs, skinless, split
- 1 tbsp. olive oil
- 2 carrots, peeled and diced
- 2 onion, diced
- 1 tbsp. Moroccan spice blend
- 1/4 cup lemon juice
- 2 cup chicken broth (without salt)
- 1/2 cup ripe black or green or green olives, sliced
- 1 tbsp. chili sauce
- 1 tsp. salt
- For Couscous: 1 cup chicken broth
- 1 cup couscous (whole wheat)
- 1 tsp dried mint
- In a sauté pan, heat olive oil and add chicken legs. Cook for 2 minutes per side.
- Remove chicken from pan. Add spice blend to sauté pan and toast lightly.
- Add carrots and onion to spice and cook for 3 minutes or until the onions have turned light yellow.
- Add lemon juice, chicken broth, and olives to sauté pan. Leave it to boil in a high heat.
- Add chicken legs, and return to a boil too. Cover and gently simmer for about 10-15 minutes.
