Fried Chicken food is a cooking method in which food is submerged in hot fat, most commonly oil. Fried Chicken foods have many of the same characteristics. Both are usually breaded or battered and fried. Deep fat fried items are always tender, portion sized cuts of meats or vegetables. They must be in uniform size and shape to ensure food is evenly cooked. If some pieces are bigger than other, the smaller ones may burn by the time the bigger ones are cooked properly. Most deep fat fried food has some form of breading on it. The breading helps protect the product and helps retain moisture.
Here are step by step for the best technique for fried food such as Fried Chicken.
1- Standard breading procedure is a common method of breading food items. Keep one hand wet and one hand dry, while items are breaded. Use first, then use egg wash and then use the breading. This ensures that the breading will stick to the product.
2- Heat the oil to the proper temperature.
3- Ensure that proper oil is used. Vegetable oil has a higher smoke point and works best. It is also important that the oil is clean.
4- Place the item into the fat and cook until done.
5- There are generally two methods of frying. The basket method uses a basket and is commonly used for breaded items. The items are breaded, placed in a basket and then lowered into the oil. The swimming method is generally used for battered items. These items are battered then slowly lowered on by one into the grease. Baskets are not used in this method. The items are then retrieved by using a spider or another type of strainer.
6- Evaluate quality.
The most important aspect of Fried Chicken food is that they should taste like the food being prepared and not the oil. If the product is greasy and soft, the oil may not have been hot enough. Proper deep fat fried foods should be crispy, not greasy but flavorful. Fried foods do not hold up well and should always be served immediately. Find out some more tasty recipes here.
