Recipe Ingredient

  • 250g butter
  • 250g flour
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 carrot, chopped
  • 2bay leaves
  • 3 garlic cloves, minced
  • 1 celery stalk
  • 1 tsp black peppercorns
  • 1 cans tomato paste
  • 1 tsp cardamom

Instructions

  2. Add the remaining ingredients and bring to a boil.
  3. Reduce the heat and leave for two hours.
  4. Strain and use in sauce.
  5. Cool and store demi-glace in the freezer for months.
