The basic Ingredients in Chicken Demi Glace:

- 250g butter
- 250g flour
- 2 canned beef broth
- 1 onion, chopped
- 1 carrot, chopped
- 4 bay leaves
- 3 garlic cloves, minced
- 1 celery stalk
- 1 tsp black peppercorns
- 1 cans tomato paste
- In a large pot, melt butter, stir in the flour until smooth.
- Add the remaining ingredients and bring to a boil.
- Reduce the heat and leave for two hours.
- Strain and use in sauce.
