1- Broccoli

The vegetables belong to cruciferous vegetables and its close relatives such as cabbage, cauliflower, and brussel sprouts. Broccoli contains sulforophane, which can help reduce the risk of chronic diseases.

Broccoli is a good source in vitamin C as an orange. One cup of broccoli including:

– Vitamin K, essential for the function if many proteins involved in blood clotting.

– Vitamin C, that builds collagen, and helps reduces the cold and flu, as well as it is a powerful antioxidant, which protect the body from damaging free radicals.

Tip before Roast chicken broccoli

 Before to cook, leave at least 30 minutes for the seasoned chicken to rest in the refrigerator and uncovered. I prefer leave more time up to 24 hours for the best result and crispier skin.  


Healthy Roasted Chicken Broccoli with Carrots Recipe 


Yield: 4 Persons

Preparation Time: 20 Minutes

Cooking Time: 45 Minutes

Level: Medium




1 whole medium chicken

2 cups of broccoli

1 tbsp vegetable oil

1/2 tbsp butter

1 tsp dried thyme

2 tbsp lemon juice

3 carrots, chopped

1 tbsp fresh rosemary

3 cloves garlic, mashed

3 small red onions

Salt and pepper




1- Season the chicken inside and out with salt, pepper, dried thyme and lemon juice. Refrigerate the chicken for at least 30 minutes.

2- Heat oven to 350-400 degrees.

3- Heat a skillet; add vegetable oil with butter, sauté small onions, garlic, and rosemary, cook for 2 minutes.

4- Add carrots, broccoli, and season with salt and pepper.

5- In the roasting tray add the chicken among the mixture veggies and drizzle a little bit oil over the top.

6- Roast the chicken broccoli for 45 minutes or until golden brown.
