Chicken Shredded Cabbage with Mint Salad


Yield: 4 persons

Preparation Time: 15 Minutes

Cooking Time: 20 Minutes

3 chicken breasts, boneless, cubed

2 cups of Savoy cabbage (sliced into fine shreds)

4 tomatoes, chopped, small cubes

2 carrots, sliced thin

1 clove garlic, mashed,

1/2 cup of fresh mint, chopped

2 tbsp juice of lemon

1 tbs dried mint

1 tbsp extra- virgin olive oil

1 tbsp vegetable oil

1 tsp dried thyme

Salt and pepper




1- Mix thyme, salt, pepper, one tablespoon lemon juice, and add the chicken for about 10 minutes.

2- In a deep frying pan heat and stir the vegetable oil and chicken cubed over high heat until golden brown. Sit aside.

3- Shred the cabbage and dice of tomatoes, carrots and place in a nice serving platter.

4- Make the dressing by whisking the rest of lemon juice, olive oil, and garlic.

5- Pour the dressing over the vegetables and add the chicken.

6- Toss to fully coat.

7- Garnish with fresh and dry mint.

8- Serve immediately.
