Chicken with Molokhia Recipe
Yield: 4 persons
Preparation Time: 10 Minutes
Cooking Time: 60 Minutes
1 chicken, cut into 8 pieces
3 cardamom pods
6 cups chicken broth
2 tbsp butter
2 bunches molokhiya leaves, washed, and dried
2 coriander leaves, washed, and dried
6 garlic cloves, finely chopped
1 tbsp coriander powder
1- Place one tablespoon butter in a hot pot and add mastic.
2- Wait until mastic has dissolved then add chicken and sear until very light golden color.
3- Add broth, cardamom, and whole onion.
4- Bring to the boil then let simmer until chicken is fully cooked and very tender.
5- Remove chicken, onion, and cardamom pods from the broth.
6- Chopped molokhiya with coriander leaves.
7- Add molokhiya to the simmering broth and stir until it comes to the boil again, the turn the heat off.
7- Mix coriander and garlic and add 1 tsp of the mix to the simmering broth.
8- Place the remaining amount in a skillet and add butter and cook on medium heat until light golden and has started to sizzle. Pour the hot mix garlic onto the molokhiya soup and stir.
9- Coat the chicken with flour and pan fry in oil until golden color.
10- Serve chicken in molokhiya or on the side.
