Easy Chicken Pasta with Avocado and Olives Recipe

Ingredients

 

2 chicken breasts, cooked

1 package wagon wheel pasta

1/2 cup black olives, seedless, diced

1 cup bell peppers (yellow and red)

1/4 cup of avocado, diced

Minced fresh basil

 

For Sauce:

One medium onion chopped

2 tbsp olive oil

1 garlic, minced

1 cup of tomatoes juice

2 tbsp tomatoes paste

Salt and pepper

 

Method

 

1- Cook wagon wheel pasta according to package direction, drain and set aside.

2- In a pan put olive oil and sauté onion, garlic, tomatoes, salt, and peeper, allow to simmer on low heat, add water if dried.

3- Add bell peppers, some of olives, and the chicken.

4- Leave to boil for 3 minutes.

5- Bring pasta, combine with the tomatoes sauces.

6- Serve and garnish with remaining olives, avocado and basil.
