Delicious Grilled Chicken Bell Peppers with Olives Recipe
Yield: 4 Persons
Preparation Time: 20 Minutes
Cooking Time: 25 Minutes
4 whole chicken breasts, boneless
1/2 cup red bell peppers cut into long strips
1/2 cup yellow bell peppers cut into long strips
1/2 cup of kalmata olives
2 cloves garlic, chopped
1 tsp dried thyme
1 tsp lemon juice
1 tsp mustard
1 tsp ketchup
1 onion, cut in half, sliced
1 tbsp olive oil
Salt and pepper
1- Mix the mustard, lemon juice, ketchup, small amount of garlic, salt, and pepper.
2- Pour over the chicken breasts in a dish and marinade for 20 minutes.
3- Grill the chicken breasts till cooked. Set aside
4- Heat one tablespoon oil in a skillet over medium-high heat; add the peppers, onion, and cook until are tender.
5- Add the garlic, thyme, olives and cook and stir for 2 minutes.
