Top Tips to make BBQ healthy

1- Chicken or fish is the best choice with barbecues. The type of meat we tend to at barbeques poses a problem. Therefore limit the amount with burgers, red meat, sausages to increase the risk of cancer.

2- Cut the chicken or meat into smaller portions to reduce cooking time and a good cooked.

3– Before grill the meat or chicken, precook in the microwave for 5 minutes that can reduce HCA by 85%.

4- Lower the temperature at your grill to prevent meat from burning.

5- Add herbs and spicy in marinade. Researches have found that use herbs and a lot of spices can reduce HCA formation.  Indeed, herbs and spices are loaded with antioxidant that will help to decrease HCA in the grilling. Add garlic, thyme, sage, or cayenne and rosemary with barbeque chicken or red meat.

6- Use beer or wine. Adding beer or wine with barbecue is good for your health too. Marinating chicken in red wine for 2-4 hours before grilling can help reduce the risk of carcinogens. Red wine is packed of antioxidants, as well as adding beer has similar positive effects.

7- Eat a lot of vegetables. We know the vegetables such as lettuce, tomatoes, parsley, onions, kale, and cucumbers are loaded of vitamins, minerals and antioxidants, which help decreases the risk of HCA.

 

Barbequed Chicken Drumsticks Recipe

Ingredients

 

8 chicken drumsticks

4 cloves garlic, crushed

1 tsp cardamom

1/2 cup thyme (fresh chopped fine)

1/2 cup yogurt

1/4 cup olive oil

1/4 cup juice of lemons

1 tsp paprika

1 cup beer or red wine

1 tsp chili powder (optional)

1 tsp black pepper

 

Method

 

1- Make a marinade by mixing all of the above ingredients and rub it all over the chicken drumsticks.

2– Cover and refrigerate for at least 4 hours.

3- Put two skewers through each drumstick to hold its shape and make it easy to move on the grill.

4- Heat the barbeque and grill the chickens until golden brown and juices run clear when the drumstick is poked.

5- Brush the cooked chickens with some lemon juice just before serving.

6- Serve immediately along side crisp salad and nuts.
