Minced Chicken Stuffed Bell Peppers Recipe


Yield: 3 persons

Preparation Time: 20 Minutes

Cooking Time: 50 Minutes

Level: Medium





6 colored bell peppers

250g minced chicken

1 medium onion minced

2 cloves of garlic minced

1 tsp paprika

1 tsp cumin

1 cup basmati rice

1 cup chicken stock

3 large tomatoes, peeled and finely chopped

1/4 cup toasted pine nuts

2 tbs tomato paste

1/4 packet parsley chopped

1/4 packet coriander chopped

1 tbsp chopped oregano

1/2 tbsp butter

1 tbsp olive oil

Salt and pepper






1- Sauté onion in a pot with butter and olive oil add garlic and spices.

2- Add rice and stir to mix well.

3- Add the stock and cover rice for 10 minutes till it absorbs stock.

4- Lower heat and let it stands 10 more minutes covered.

5- In a separate pan, cook minced chicken in some butter and olive oil, till browned.

6- In a bowl mix together rice with chicken, tomatoes, fresh herbs, nuts, and paste.

7- Season with salt, pepper.

8- Stuff peppers with mixture chicken, cover with tops.

9- Place in ceramic dish, drizzle some olive on them, bake for 30 minutes
