Best Chicken with Fava Beans and Rice Recipe
Yield: 4 Persons
Preparation Time: 20 Minutes
Cooking Time: 25 Minutes
300g chicken breasts, cut into small cubed
200g of fresh fava beans
1 1/2 cup basmati rice
3 cups chicken broth
1/2 cup parsley, or coriander, chopped
1/2 tsp cinnamon
1/4 cup of pistachio or hazelnut, crushed
1 onion, chopped
Salt and pepper
1- Soak the rice in warm water.
2- In a sauce pan, fry the pistachio or hazelnut for 2 minutes. Remove and sit aside.
3- In same saucepan, heat olive and sauté onion, then chicken until brown.
4- Add the fava beans, rice, chicken broth, salt, cinnamon, and pepper. Bring it to a boil, cover the pan.
5- Cook for 15 minutes or until chicken, rice and fava beans well cooked.
6- Sprinkle parsley over.
7- To serve put the chicken fava beans with rice in the plate and garnish it with the pistachio nuts.
