3 chicken breasts, boneless
1/2 cup mushrooms, slices
1/2 tsp butter
1/2 tsp vegetable oil
2 cups colored bell peppers, diced
2 cups Iceberg lettuce, sliced into shreds
2 springs onions (white only) sliced thin
100gm Parmesan Reggiano cheese
1 packet orzo pasta
1 tbsp mustard
2 tbsp extra virgin olive oil
1 tsp garlic, mashed
1 tbsp lemon juice
1- Cut chicken breasts in small cubes.
2- In saucepan heat vegetable oil with butter and add the chicken, cook until golden brown. Set aside.
3- In a same saucepan, sauté mushrooms in a little oil and set aside.
3- In a bowl whisk mustard, extra-virgin olive oil, garlic, lemon juice, and pepper. Store it in refrigerator for 10 minutes.
4- Cook orzo pasta as usual, and drain.
5- In a large bowl add chicken, colors bell peppers, mushrooms, iceberg lettuce, onions, and add the dressing. Using your hands gently toss everything together.
6- Sprinkle grated cheese over.
