Best Baked Chicken Fingers Quinoa Recipe

Ingredients

 

3 chicken breasts cut into fingers or strips

1 cup white quinoa, uncooked

1 tsp dried thyme

1/2 cup yogurt or buttermilk

1 egg

1/2 cup corn flour

1/2 tsp paprika

1 tsp ground black pepper

Salt

Cooking Spray

 

Sauce:

 

1/4 cup of mustard

1/4 cup of mayonnaise

1 tbsp lemon juice

1tsb garlic, mashed

1/4 cup chopped dill or parsley

 

 

Method

 

1- Preheat over to 350-400 degrees.

2- In a pan cook quinoa over medium heat, stirring occasionally for 5 minutes or until toasted. Let it to cool, then in the processor and process very finely. Put in a bowel

3- In a large bowl, combine together corn flour, thyme, paprika, half of black pepper, and salt.

4- In other bowl stir together yogurt or buttermilk and egg.

5- Dredge chicken fingers in corn flour mixture, then dip chicken in buttermilk mixture, and dredge in quinoa (pressing very well). Store in the refrigerator at least 20 minutes.

6- Place the chicken fingers in the baking tray with cooking spray.

7- Bake the chicken finger until golden browned.

8- Make the sauce, combine all ingredients.

9- Serve with chicken fingers.
