Ingredients

 

2 chicken breasts, boiled and cut Julian

1 cup kidney red beans

1 red onion, slices

2 bunches of arugula

1 cup bell peppers, colors (red, yellow, green)

2 tbsp extra-virgin olive oil

1/2 tbsp balsamic vinegar

1 tbsp lemon juice

Salt and pepper

 

 

Method

 

1- in a small bowl whisk together lemon, vinegar, and olive oil. Season with salt and pepper.

2- In a nice bowl add the chicken, arugula, bell peppers, and onion.

3- Pour the dressing and toss salad.

4- Serve immediately and garnish with grated cheese over.
