Amazing Chicken Baked Zucchini Pasta Recipe

300g chicken breasts
8 small zucchini, cut slices or small cubes
2 cups small macaroni or penne pasta, cooked
2 cups milk
1 onion, chopped
1 tbsp ghee
1 tbsp vegetable oil
1 tsp dried thyme
1/4 cup red bell pepper, diced
1 cup cheddar cheese or parmesan
1 tsp baking powder
1 tsp white pepper
1- Cut the chicken in small cubes.
2- Place in a Dutch oven with some ghee. Cook till brown.
3- Remove from the pan.
4- Add the onion in the sauce pan with remaining ghee and oil, sauté quickly.
5- Add the zucchini, red bell pepper, thyme, and white pepper. Cook for 5 minutes.
6- In a bowl whisk together eggs, milk, baking powder, and 1 tbsp of grated cheddar cheese.
7- Add pasta, chicken, and zucchini mixture to the milk. Combine well.
8- In Pyrex pour the chicken zucchini pasta, sprinkle remaining cheese.
9- Place in the oven on high heat to caramelize the top.
