  1. Brine the chicken breasts

It is worth every minute as it makes your chicken moist and juicy. The chicken should be brined in warm water. This balances its temperature with that of the room and does some cooking.

Fill a big bowl with warm water and dissolve in it a handful salt. Put the chicken in the brine and let them stay for about 15 minutes. Remove the pieces from the brine and rinse with cold water. Pat with a dry towel to dry.

The chicken should be brushed with melted butter. The melted butter gives a golden crust on the chicken in addition to giving it great flavour. The low-temperature way takes longer (30 mins) than the high-temperature alternative which only takes 15 minutes. I would, however, recommend the high-temperature way. The roasting time depends on the thickness of your chicken. For uniform roasting, pound your chicken pieces to even thickness with a meat mallet. Roasting with high heat makes the chicken develop a crispier outside crust. This locks in the juices are making the chicken inside perfectly tender. The process is also easier and speedier than the low heat way. Investing in a cooking thermometer won’t hurt, it helps in knowing if the chicken is fully cooked (170° F). Cutting out the pieces with forks to check if the food has cooked seeps out the juices.

  1. Rest your chicken

You should let your chicken rest before attempting to cut into it. Patience is a virtue, and this is the place to practice it. Cutting into the chicken just after cooking it makes it lose all its juices. It also makes the chicken lose its tenderness. At this resting time, the chicken soaks back all juices and finishes cooking itself. The resting time should only take about ten mins. Currently, cover the chicken with aluminium foil.
