Easy Chicken Okra Casserole Recipe
Yield: 4 Persons
Preparation Time: 10 Minutes
Cooking Time: 30 Minutes
2 whole chicken breasts cut into large cubes
300g of okra
3 large tomatoes peeled and cut into chunks
1 tbsp tomatoes paste
1/4 cup red chili, slices
4 cloves garlic
2 onions, chopped
1/2 a bunch of chopped coriander
1 tbsp butter
1 tbsp olive oil
1 tsp black pepper
1- After wash okra, drain well. Using a sharp knife, cut off the stems, and cut okra into slices. Set aside.
2- In a casserole, sauté onion, with olive oil and melt butter, add the chicken for 5 minutes.
3- Add the okra, tomatoes, chili, and garlic, cook for 20 minutes.
4- Add black pepper, salt, and coriander, stir and finally add a little bit of lemon juice.
5- Serve hot with Basmati rice.
